the grapes for Le Paradou Cotes de Provence Rose are havested early in the morning to maintain thier quality. After cooling and gentle pressing, only the juice from the first pressing is used and then fermented in stainless steel tanks at 14 degress celcius to 15 degrees celcius. Following clarification, the wine is bottled, preserving its refreshing acidity.
