Introducing Palenqueros Tobaziche, masterfully crafted by Rey Arellanes in Santa Catarina Minas, Oaxaca. This mezcal showcases a unique expression of Tobaziche, distinct from the version produced by Juan Hernandez in both style and production. Rey Arellanes' Tobaziche is created at a palenque situated approximately 1,500 meters above sea level. The agaves undergo a traditional process, being cooked in an underground pit oven, hand-milled with mallets, and fermented naturally with wild airborne yeasts for twelve days. Finally, the spirit is double distilled in a small clay pot still.
